About the Recipe
There are some chicken recipes that anyone should have in their back pocket. They are make ahead recipes that reheat well, are saucy and easy to eat with rice or naan, and have some spice, but not so much so that some of your guests are scared. This Chicken Handi is right up there.
Ingredients
Protein
Boneless Chicken Thigh - 1 lb. (cut into bite sized pieces)
Spices (Amazon Links Below)
Turmeric powder-1/2 tsp
Red Chili powder -1 tsp
Kashmiri Chili Powder- 1.5 tsp
Dahna Jeeru (Cumin) Powder-1/2 tsp
Black Pepper -1/4 tsp
Garam Masala powder- 1/2 tsp
Kasuri Methi- 1 tsp
Other Ingredients
Onion, chopped- ½ Medium Red OnionÂ
Ginger Garlic paste-1.5 tsp
Tomato Paste-3 tbspÂ
Plain Yogurt- (5-6 tbsp)
Heavy Cream - 5 tbsp
Cilantro Leaves chopped- 4 tbsp
Salt-1 tspÂ
Oil -4 tbsp
Water-¼ cup
Preparation
Step 1
Heat oil and add the chopped onions.
Sauté on medium heat for around 5 mins until translucent and then add the cubed chicken pieces.
Step 2
Sauté on high heat for around 2 mins or until slightly browned and then add the ginger garlic paste. Continue the Sauté for another 3 minutes.
Step 3
Now add all the spice powders ( NOT kasuri methi) and sauté on medium heat for around 3-4 mins.
Step 4
Add the tomato paste and 3 tbsp of the water and cook on medium heat for 3-4 mins.
Step 5
Turn off heat and add the whisked curd and fresh cream. Mix well and return to low heat. Cook on low heat for 4-5 mins till oil separates.
Step 6
Add water, give a mix and cover & cook low heat covered for 5 mins.
Step 7
Add crushed kasuri methi and give a mix. Cook for 2 mins on low heat.
Step 8
Lastly garnish with chopped coriander leaves and serve over your favorite rice.
